Barber Wheat Flour (Pre-order Only)



A hard red winter wheat with excellent flavour and bread flour genetics. The wheat was developed for renowned chef, Dan Barber, of Blue Hills at Stone Barns, in New York.

Current season’s flour is high protein. Over a decade ago, Barber wanted to elevate wheat to hero ingredient status- despite the drive for the freshest most flavoursome ingredents across other foods in kitchens, wheat was largely seen as unimportant, despite being a key food in our lives and the foundation of agriculture

This variety was developed for flavour and performance in low input farming systems at The Bread Lab, Washington State University. This seasons protein is 14.4%. Flavour is outstanding

Product Information

It is a cross between Spanish heritage variety Aragon and a modern breeding line. Milled at high extraction (85%). Flavour is outstanding. Kosher certified.
