Aragon Heritage Bread Flour
Strong, high extraction flour milled from Spanish wheat from the 1920s selected from a landrace dating back centuries. Aragon or Catalan de Monte, is known for its great flavour and ability to achieve high protein in poor/low nutrient conditions, and to grow well in low rainfall due to the extent of its large root system.
The four is creamy and the 2021/22 grain makes dough that is very strong. It’s a true heritage wheat from the early 20th century though the material from which it was selected was being grown and re-sown far longer.
